Chipotle Vegan Burrito with Cilantro Lime Rice

The Ultimate Vegan Burrito - the perfect meatless dish! Filled with chipotle black beans, cucumber coriander, pico de gallo, avocado, and spicy sauce. They are packed with flavor and will be on your table in no time.

Ingredient
Lime Coriander Rice

  • 1/2 teaspoon salt (I add to the cooking water)
  • 1 cup of long grain rice, cooked according to package instructions
  • 2 tablespoons of lime juice, freshly squeezed
  • 1/2 cup coriander, choppe
Pico De Gallo (Sub 1 1/2 Cup Diced Tomatoes)

  • 1-2 tablespoons of lime juice
  • 1/2 cup coriander, finely chopped
  • Salt to taste
  • 1 1/2 cup tomatoes, diced small (about 3 medium tomatoes)
  • 1/2 cup onions, small diced (about 1/2 medium onions)
Chipotle & Lime Black Beans

  • 1 chipotle pepper in adobo sauce + 2 tablespoons of sauce, finely chopped
  • Salt to taste
  • 2 15 ounces of black bean cans, rinsed and dried
  • 1-2 tablespoons of lime juice, freshly squeezed
For Presentation

  • 1/2 cup vegan sour cream, mix with spicy sauce if desired (sub vegan mayo)
  • 4 large tortillas, 10 inches
  • 1 large avocado, sliced or diced

Instructions
Lime Coriander Rice
After the rice is cooked, remove the heat and stir with a fork. Add lime juice and cilantro, then stir gently to mix evenly. Taste the seasonings and add more if needed. Cover with the lid to keep warm.

Chipotle & Lime Black Beans
In a medium skillet over medium heat, add the beans, chipot paprika and adobo sauce. Simmer a little over the entire, around 2-3 minutes. Remove from the heat and stir in lime and salt to taste. Stay closed.

Pico De Gallo
In a medium bowl, combine all ingredients well. Taste and adjust the taste if needed. Put aside.

Serve
Heat tortillas in a large skillet over medium heat, about 15-20 seconds on each side. Place it on a flat surface and add your filling in the middle (not to overflow). Fold the sides and tuck the top fold under the filling as you curl. Keep turning hard until it's finished (see the video for visual instructions).
