Vegan Crispy Chicken Caesar Sandwiches
This is the best sandwich I have ever had. This vegetarian Chicken Caesar Sandwich comes on several levels. So, if I said that before, know that it's only because I haven't tried this sandwich. Crispy peanut "chicken" bread, BEST vegan Caesar sauce, romaine lettuce all on top of your favorite bread. Easy, healthy, and packed with protein.
I can eat vegan crispy chicken Caesar sandwiches every day for the rest of my life and never get bored with it. I have been fiddling with different "chicken" patty recipes, and this one is perfect. After baking it, the outside is so crispy that you can hear crispness, and perfect suppleness in the middle while still moist.

Ingredient
Dress in Caesar Caesar
  • 1 teaspoon. Nutritional yeast
  • Salt and Pepper
  • 1/4 C. Vegan Mayo
  • 1 teaspoon. Dijon mustard
  • 1 teaspoon. Capers
  • 1 Lemon juice
  • 1/4 tsp. Garlic powder

Crispy Chickpea "Chicken"
  • Pinch of black pepper
  • 1/3 C. Vegetable broth
  • 1 teaspoon. Poultry seasoning
  • 1 C. Breadcrumbs, to coat the outside
  • 15 ounces Can Chickpeas (garbanzo beans), dried
  • 1 teaspoon. Olive oil
  • 2 tbsp. Soy sauce
  • 1/2 C. Vital wheat gluten
  • 1/3 C. Panko breadcrumbs
  • 1/2 tsp. Salt

For Sandwich
  • Bread
  • Romaine Lettuce


Instructions
  1. Preheat the oven to 400 degrees.
  2. Next, drain the beans and add to a large bowl. Mash all beans with a fork or a masher. Make sure everything is mashed.
  3. Now add olive oil, vegetable broth, soy sauce, vital wheat gluten, panko, and seasonings to a bowl with crushed beans. Leave extra breadcrumbs, these will be used for layers.
