When I started the Keto diet, I was a little worried that I would be shaken when I craved some of my favorite classic foods - like Chicken Soup. Traditionally, our soup has large pieces of potato and noodles. Talk about weight in carbohydrates. To make healthy Chicken Keto Soup, we need to replace carbohydrates with ingredients that are equally satisfying but stay true to the Keto diet and low-carb recipe guidelines.

Total Time: 1 Hour 10 Mins
Ingredient
- 1/4 cup Kosher Salt
- 4 celery sticks
- 1/2 bunch of Cilantro
- 1 whole lemon
- 1 Whole Organic Chicken
- 4 whole carrots
- 1 whole jicama
- 2 Onions intact
- 5 cloves of garlic
- 1/2 bunch Parsley
Instructions
- Run whole chicken under cold water, clean it well to remove impurities.
- Using a large saucepan, add the whole chicken, two chopped onions, parsley, cilantro, garlic, chopped carrots, and chopped celery.
- Fill the stock pan with cold water until the chicken is submerged.
- (make sure the water is cold).
- Simmer on medium heat for one hour.
- (using a skim spoon all the dirt that floats to the surface), every about 15 minutes.
- After one hour, turn off the heat and set aside for 20 minutes.
- Remove the whole chicken, set aside. Stock filter.
- Remove the skin from the chicken and break it to your liking.
- Remove the bone and store additional meat for future use. It will be stored in the freezer for 2 weeks.
- Next, peel and dice up to 1 inch cube. Put aside.
- After the chicken broth is finished, add the diced jicama and serve immediately.
- Complete the plate with parsley stalks and or cilantro.
- Salt and pepper to taste.
- Squeeze the fresh lemon juice in a bowl to taste. Don't worry if the seeds fall, they are good for you.
- Share with the people you love, and those who might be sick.
