Easy Mexican Casserole |
Easy casserole with beef and simple ingredients are some of our favorite foods! This Easy Mexican Casserole Recipe is a classic noodle and hamburger casserole that has been in the family for years. Even our picky eaters enjoy eating this easy meal!
Prep Time : 20 minutes
Cook Time : 40 minutes
Total Time : 1 hour
Ingredients
- 1/3 green pepper diced
- 1 1/2 cup sharp shredded cheddar cheese
- 1 1/2 pounds ground beef
- 1 1/4 cup onion diced
- 8 ounces noodles
- 1/2 teaspoon salt
- 2 cans tomato soup
- 1 cup water
Topping
- 4 tablespoons butter melted
- 1 1/4 cup bread crumbs
Instructions
- Brown ground beef, season with salt. Add onions while ground beef is cooking so onions soften. Drain fat from ground beef.
- Cook noodles.
- Preheat oven to 350 degrees Fahrenheit. Lightly coat 9x13 inch casserole dish with non-stick cooking spray.
- Use a mixing bowl and combine the ground beef mixture, cooked noodles, cheese, water, tomato soup and pepper.
- In a separate microwave safe bowl melt butter and stir in breadcrumbs. Sprinkle evenly over top of casserole. Bake for 35 - 45 minutes until breadcrumb mixture is browned.
