Healthy Chocolate Protein Mousse |
This soft and gentle mouse is easily made from only a can of very dark white and brown beans. It is vegan and without any wheat so it is suitable for a milk free, egg free, and gluten free diet.
Prep Time: 10 Minutes
Additional Time: 1 Hour
Total Time: 1 Hour 10 Minutes
Ingredients
- 1 can of White beans / cannellini, 400ml / 14oz
- 5.3oz / 150g Dark chocolate
Instructions
- Melt most of the chocolate in a bowl over hot water, leaving enough chocolate to serve.
- Pour the beans into a colander with a bowl underneath to catch all the bean juice.
- Shake the bean juice with an electronic shaker for a few minutes while the chocolate melts.
- Add beans to melted chocolate and blender together in a jug blender or food processor. You may have to scrape the sides several times.
- Continue to shake the bean juice (AKA aquafaba) until a stiff peak is formed, this takes about 8-10 minutes with an electric shaker.
- A stiff peak is when you can turn the bowl over and the mixture doesn't move. With Aquafaba you don't need to worry about excessive shocks.
- Fold the chocolate mixture into aquafaba then pour into 4 plates.
- Chill for an hour then sprinkle mousse with grated chocolate.
- Store protein mousse in the refrigerator and enjoy it in 3 days.
