Spicy Mexican Chicken Lasagne Recipe

Mexican spicy chicken lasagna - Mexican food with a special delicious taste in the lasagna recipe.
Ingredients
- 1 glass (240 ml) of water
- 8 sheets of oven ready lasagna (may need a little more or less depending on the dimensions of the plate)
- 2 grape tomatoes, thinly sliced
- 2 scallions, thinly chopped coriander or chopped
- 600g (21 oz) extra powdered chicken (chopped) or turkey
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves of garlic, crushed
- 9 tablespoons of quark
- 1/4 teaspoon chilli pepper
- 2 cups (480 ml) mashed tomatoes - or use passata but then add 2 tb of tomato paste / puree
- 2 teaspoons of chili powder
- 2 teaspoons of cumin
- 2 teaspoons of paprika
- 1 teaspoon of onion powder
- 1/2 teaspoon of garlic powder
- 1 tablespoon of white wine vinegar
- 3/4 tablespoons sukrin: gold (or other choice sweeteners)
- 120g (4oz) cheddar (4 x hea's)
- 100g (5.5 ounces) mozzarella (2 x hea)
- Salt and pepper according to season
- Cooking oil spray
Instructions
- Preheat the oven to 180c or 350f
- Add crushed tomatoes, water, vinegar, spices and golden sucrose (sweetener) to a small saucepan, bring to a boil and lower the head to the boiling stew, until the sauce is reduced and thickens slightly.
- Spray the pan with cooking oil spray and add ground chicken, paprika, onion and garlic.
- Cook until the chicken is pounded brown, remove and stir in the quark until everything is mixed
- Add half the chicken mixture to a large rectangular proof oven plate and spread evenly
- Add 4 pieces of lasagna above and half the spicy tomato sauce.
- Sprinkle with the other half of the chicken mixture, 4 pieces of lasagna and pour the remaining spicy sauce on top.
- Sprinkle with grated mozzarella and cheddar and top with 6 sliced tomatoes.
- Season with salt and black pepper.
- Cover with foil and bake in the oven for about 20 minutes, then remove the foil and return to the oven for 20 minutes until the cheese on top is browned. (you can place it under the grill / grill for 5 additional minutes if you really want to be the best)
- Sprinkle with chopped onion or coriander and serve with the side of your choice
