Christmas Tiffin Chocolate Cake |
Christmas chocolate tiffin is a quick, easy-to-make and very delicious no-cook recipe. It's packed with cherries and raisins soaked in the spirit of your choice.

Ingredients
For Tiffin
- 40g of light brown soft sugar
- 25g cocoa powder (don't drink chocolate)
- 300g rich tea biscuits
- 125g raisins or sultanas
- 200 g of cherry glace
- 80ml brandy
- 150g of butter
- 200g gold syrup
For Toping
- 100g of very dark chocolate
- 100g milk chocolate
Instructions
Preparation
- Brush the can with a little butter or coat the base with parchment cake or liner
- Place the fruit in a small bowl with brandy and microwave in a high position for 30 seconds
- Stand for 5 minutes
- Stir and microwave on high for 30 seconds
For Tiffin Chocolate
- Crush the biscuits
- Put the biscuits in a big bag
- Shake with a rolling pin until the biscuits are small. Some biscuits will powder and some will become larger chunks - that's what you want
- In a large saucepan, melt the butter, sugar, and golden syrup and stir until mixed
- Turn off the heat, add the crushed biscuits and chocolate and stir until blended
- The brown color must be distributed evenly
- Add the fruit and the remaining liquor and stir carefully
- Press the mixture into the can with the back of the spoon. Push down firmly
- Turn the spoon over and use the tip to spruce up the bottom edge of the cake
- Allow it to cool.
For Toping
- When the base is cool, remove it from the tin and remove the liner
- Put the chocolate in a small basin and good:
- Melt it in the microwave.
- Use bursts of 30 seconds at high power, stir between the two. After the chocolate starts to melt, keep time. If you get hot, the chocolate will break. Or
- Place the basin on a pan of hot water but don't touch the water. Do not let the water boil. Stir regularly
- Using a clear glass bowl means you can see what water is doing
- After the chocolate has melted, pour it over the base and spread evenly using a knife
- Allow to cool, then cut into squares
