Slow Cooker Leek and Potato Soup Recipe


Slow cooker leek and potato soup - simple soup recipes for classic leeks and potato soup made in slow cooker. Syn free on world slimming.

Ingredients:
  • 1 onion
  • Vegetable stock 1.5 l
  • 900g potatoes
  • 2 medium leeks


Instructions
  1. Peel and cut the potatoes into pieces that are slightly smaller than the one you use for grilled meat.
  2. Slice the scallions into a 2cm thick disc.
  3. Cut the onions into chunks.
  4. Put everything in the slow cooker.
  5. Make vegetable broth and pour over vegetables.
  6. Place the slow cooker on high for 3 hours or medium for 4-5.
  7. Use the stick blender until smooth. (watch out for splashes, if it's still hot.)
  8. If it's too thick, add a little water
  9. Stir in salt and pepper to taste.
  10. When serving, stir one tablespoon of plain yogurt (optional).
