Delicious Syn Free Chicken Noodle Singapore - a curry flavored noodle dish that will become commonplace on your meal plan.
Singapore Noodles must be one of my favorite noodle dishes. I love the taste of curry and I love noodles, so this is a clear winner for me and this version of the popular recipe won't disappoint. This is Syn Free and will impress your taste buds with a taste explosion after you dig into the bowl of this dish.

Ingredients
  • 1 tablespoon of sucrose, or another sweetener of choice
  • 2 teaspoons Sambal Oelek (chili paste)
  • 1 tablespoon soy sauce
  • 2 eggs, beat
  • 1 small carrot, grated into long pieces
  • 1/2 teaspoon ginger
  • spray cooking oil
  • 4 boneless and skinless chicken thighs (270g / 9.5oz), trimmed from all visible fat and sliced into pieces
  • 100g (3.5oz) of dried egg noodles
  • 1 tablespoon of Malaysia Curry Powder (or only use regular curry powder if you can't get this)
  • 1 teaspoon of turmeric
  • 1/2 teaspoon garlic powder
  • 1 small onion, halved and sliced
  • 100g (3.5oz) mushrooms, sliced
  • 1 green bell pepper, cut into pieces
  • 1 red bell pepper, cut into pieces
  • 1 tablespoon of rice vinegar
  • 2 leeks, finely sliced

Instructions
  1. Spray the pan over medium heat with a little cooking oil spray
  2. Add chicken, curry powder, turmeric, garlic, ginger and oelek sauce and fry until browned. Add a few tablespoons of water, to make a small sauce around the chicken.
  3. Lift, set aside.
  4. Wipe the pan clean, then spray with some more fried oil spray and add all the vegetables, saute for about 4 minutes. Add soy sauce, rice vinegar and sweeteners.
  5. Cook the noodles according to the package instructions.
  6. Add noodles and chicken to the pan with vegetables with chicken and stir to combine all the ingredients.
  7. Spray a small skillet or pan over medium heat with cooking oil and add beaten eggs.
  8. Cook until it starts to set and then break with a wooden spoon.
  9. Add this to the noodles and throw to combine.
  10. Serve in a bowl topped with chives.
