Ingredient
  • 1 tablespoon of fresh thyme leaves
  • 1 cup of frozen peas
  • 3 (3-4 ounces) chicken breast fillets, cut into small pieces
  • 1 cup of frozen or fresh corn kernels
  • 1/2 cup long brown rice raw rice (we use Uncle Ben's Instant Red Rice)
  • 4 cups of low-sodium chicken broth
  • 3 carrots, sliced
  • 1 cup of chopped onion
  • 2 cloves of garlic, chopped
  • 1/2 teaspoon halal or sea salt
  • 1/4 teaspoon black pepper


Instructions
Add all ingredients, except corn, peas and rice, to the slow cooker, cover and cook for 6-8 hours low, or until the carrots are soft and the chicken is cooked. Add corn, peas, and rice for the last 10-15 minutes of cooking time.
