Baked Chicken Fajita Roll Ups |
I can eat them quite a lot on certain workdays, I mean not only are they packed with lots of flavors, but with just a few simple ingredients you can easily make a healthy filling dinner! Being fajitas which is literally one of our favorite foods, I think it would be fun to do a little spinning on traditional fajita dishes and just roll the chicken around vegetables to make one perfect small serving.
Ingredients
For Chickens
- ½ green paprika, sliced
- 3 chicken breasts or 6 thin slices of chicken ¼ inch inches
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
For Marinade
- A little cayenne pepper (optional)
- 1 teaspoon. chili powder
- ½ teaspoon. salt
- 2 tablespoons of coriander, chopped
- 2 tablespoons of olive oil
- Half lime juice
- 1 clove garlic, chopped
- ½ teaspoon. cumin
- ½ teaspoon. dried oregano
Instructions
- In a small bowl, shake with olive oil, lime juice, garlic, chili powder, cumin, oregano, salt, chili (if using) and cilantro. Put aside.
- For chicken breast, if you buy pre-sliced chicken meat slices then proceed to the next step. If using chicken breast, cut it into 2 slices evenly and hit the chicken firmly using the soft side of the meat tenderizer to an average thickness of ¼ inches.
- Place the chicken pieces in a large, resealable freezer bag and pour the marinade on top, making sure everything is fully coated. Let the chicken marinate for at least one hour to last night.
- After the chicken is marinated, place 6 slices of paprika in the center of the chicken pieces, roll and tighten with a toothpick. Repeat this step until all the meat slices have been rolled and place the seams under the prepared baking sheet.
- Brush the top of the chicken with the remaining marinade and bake, open, at 375 for about 25 to 30 minutes or until the juice is clear.
