Loaded Broccoli Cheese Potato Soup

Ingredient
  • 6 slices of bacon cooked and chopped
  • 1 teaspoon salt
  • 1/3 c flour
  • 2 canned chicken broth 14.5 oz
  • 2-3 large carrots are peeled and diced
  • 4 potatoes are being peeled and diced into small pieces
  • 1 teaspoon shallot powder
  • 1/2 teaspoon garlic pepper
  • 2 small heads of broccoli washed and cut into small cubes
  • 3 TB of butter
  • 3 1/2 c milk
  • 4 c grated cheddar cheese


Instructions
  1. In a large saucepan, combine the chicken stock, carrot potatoes and onion powder. Bring to a boil, cover and simmer for about 10 minutes.
  2. Add broccoli, cover and simmer for an additional 10 minutes.
  3. When it boils, melt the butter in a large saucepan. Beat the flour and cook a little more (or until golden brown). Beat in milk and cook for 5 additional minutes until the sauce thickens.
  4. Add cheese and stir until everything melts. Add salt and pepper garlic. Pour the cheese sauce into a large saucepan and stir until evenly mixed.
  5. Add more milk for a thinner consistency and add the extra salt and pepper needed. Top with chunks of meat.
  6. Serve warm.
