Blackened Salmon with Avocado Salsa
Salmon seasoned with a tasty cajun spice blend and pan fried until crispy served topped with a cool and creamy avocado salsa!
Today I have a super quick, easy and tasty meal for you, a blackened salmon with avocado salsa. This recipe could not be simpler, you just season the salmon with a cajun seasoningand then pan fry it until crispy and serve it topped with a cool and creamy avocado salsa. The cajun seasoning is full of flavour and includes a spicy heat that goes perfectly with the buttery salmon and the fresh avocado salsa. The salmon is pan fried at high heat in a skillet until the skin and outside is nice and crispy and the inside remains nice and moist and tender. The avocado salsa goes amazingly well with the blackened salmon and I sometimes like to change things up a bit by serving it with an avocado and cucumber salsa where the crispy and juicy cucumber adds an amazing texture to everything. This blackened salmon with avocado salsa is the perfect quick, light and tasty meal to kick off the New Year!
Ingredients
For The Blackened Salmon:
• 1 tablespoon oil
• 4 (6 ounce) pieces salmon
• 4 teaspoons cajun seasoning
For the avocado salsa:
• 2 avocado, diced
• 1/4 cup red onion, diced
• 1 jalapeno, finely diced
• 1 tablespoon cilantro, chopped
• 1 tablespoon lime juice
• salt to taste
For the avocado and cucumber salsa:
• 2 avocado, diced
• 1 cup cucumber, diced
• 1/4 cup green onion, diced
• 1 tablespoon parsley, chopped
• 1 tablespoon lemon juice
• salt to taste
Directions
For the blackened salmon:
1. Heat the oil in a heavy bottom skillet over medium-high heat, add the salmon, seasoned with the cajun seasoning, and cook until deeply golden brown to slightly blackened before flipping and repeating for the other side.
