Georgia Peach Cake
A simple buttermilk cake topped with fresh Georgia peaches is what summer is all about in the South. I remember crossing the border into Georgia for the first time driving down I-85 years ago. The sight that greeted us was a giant peach looking almost real in it’s fuzzy plumpness. “Welcome to the Peach State” it said. I thought immediately of Gone With the Wind and the peaches and cream complexions of Scarlett O’Hara and all of the other southern belles.
Ingredient:
· 4 peaches, peeled and sliced
· 1/4 cup sugar
· 1 1/2 sticks unsalted butter at room temperature

· 2 tsp. vanilla
· 2 1/3 cups cake flour (sifted, then measured)
· 1 1/2 tsp. baking powder
· 1/2 tsp. salt
· 1/2 tsp. baking soda
· 1 cup of buttermilk
Instruction
1. Butter a 9″diameter springform pan. Cut a piece of parchment paper to fit the bottom and butter that. Dust the pan with flour. Place pan on a baking sheet.
2. Preheat oven to 350 degrees F.
3. Mix sliced peaces with 1/4 cup sugar in a bowl and allow to rest for a few minutes. Arrange peach slices in bottom of springform pan.
