Pineapple Beef Stir Fry Recipe |
Packed with vegetables, tender beef and pineapple, this sweet-and-sour stir-fry is ideal for windy evenings or weekends full of activity.

Ingredient
- 1 large carrot, sliced
- 1/3 cup DOLE sweetened pineapple tidbits
- 1/8 teaspoon chili pepper
- 3/4 teaspoon olive oil, divided
- 1 small green paprika, cut into stems
- 1 glass of brown rice
- 1/2 cup unsweetened pineapple juice
- 2 tablespoons of white wine or low-sodium chicken stock
- 1 tablespoon of brown sugar
- 1 tablespoon of low-sodium soy sauce
- 1/2 pound of sirloin steak over beef, cut thinly
- 1 tablespoon of corn flour
- 1/2 small onion, halved and sliced
- 1/4 cup of fresh snow peas
Instruction
- In a small bowl, mix the first five ingredients. Pour 1/3 cup of seasoning into a large, resealable plastic bag; add beef. Bag seals and swivels to coat; chill for 30 minutes. Cover and chill the remaining seasoning.
- In a small bowl, mix cornstarch and special marinade until smooth; set aside.
- Drain and remove the marinade. In a large nonstick skillet or pan, stir-fry beef with 1/2 teaspoon oil for 2-3 minutes or until it is no longer pink. Lift with a slotted spoon and keep warm.
- Saute the carrots and onions in the remaining oil for 4 minutes. Add green peppers and peas; saute 2-3 minutes longer or until vegetables are tender.
- Stir in the corn flour mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until it thickens. Add beef and pineapple; heat through. Serve with rice.
