Delicious Caramel Apple Cookies

This cookie texture reminds me of the always popular pumpkin cookie recipe.
Cookies are soft like cookies. It pairs perfectly with frozen and crispy roasted pecans.

Ingredients
Cake
  • 1 large sour apple, roughly peeled and shredded
  • ¼ teaspoon salt
  • ½ cup butter, soft
  • 2 ½ cup flour
  • 1 ¼ cup of brown sugar packed
  • 1 teaspoon of baking soda
  • 1 teaspoon of apple seasoning
  • 1 egg
  • ½ cup of apple juice

Freeze
  • 2 glass of powdered sugar
  • ½ cup brown sugar packed
  • ½ cup finely chopped pecans, roasted
  • 3 tablespoons of butter
  • 3 tablespoons of apple juice


Instructions
Cake
  1. Preheat the oven to 350 degrees. Cover the baking sheet with baking paper.
  2. In a large bowl, shake the butter until smooth, about 45 seconds. Add brown sugar, baking soda, apple pie spices, and salt. Beat at medium speed until well blended. Add eggs and beat until mixed. At a low speed beat in ½ cup apple juice. Beat the flour until well blended. Stir apples.
  3. Drop by 3 inch round tablespoons onto the cake sheet. Bake for 8 to 10 minutes or until the edges are light brown. The peak will be seen under baking. Let it cool on a baking sheet for 3 to 4 minutes before transferring to a wire rack until it cools.

Freeze
  1. On medium heat, cook and stir 1/2 cup brown sugar, butter, and apple juice until the sugar has dissolved and the butter has completely melted, remove from the heat. Beat the powdered sugar gradually, working quickly. Use frosting immediately, if it starts to harden stir in hot water one teaspoon at a time until the desired consistency is achieved.
  2. Frozen cookies, sprinkle with pecans.
