Crispy Butternut Squash Fries Recipe
Low calorie and low carb alternative for french fries. This Butternut Squash Fries is the perfect way to make your fussy eater eat more vegetables!

You know autumn is here when pumpkin and pumpkin recipes start appearing all over the place. Just as I like Butternut Squash, I really can't let go of the winter months so I tend not to eat them during Spring and Summer. But after months of cold salads I'm ready to start tucking my favorite squash again.

Ingredients
  • 1 tablespoon olive oil
  • 1 butternut squash
  • Sea salt for decoration

Instructions
  1. Preheat the oven to 200c. Peel and cut the pumpkin in half lengthwise. Take the seeds and then cut each of them into french fries or slices.
  2. Stir fried potatoes in oil and then put in one layer on a baking sheet. Bake for 20-35 minutes (depending on the size of your french fries) spinning once.
  3. Remove from the oven and sprinkle with sea salt.
