Chocolate Kahlua Fudge
Are you familiar with the fabulous Ben & Jerry's Coffee, Coffee BuzzBuzzBuzz!® ice cream flavor? It's extra-coffee flavored ice cream with espresso fudge chunks. Uh, yeh. Can you see how it gets it's name?
Well, I didn't really mean to, ... but I think I kinda created a similar type caffeine-wired-up sweet treat with this Chocolate Kahlua Fudge ~ chocolate fudge loaded with Kahlua, laced with instant coffee granules, and topped with chopped dark chocolate covered espresso beans. Oh my! And it's so good.
Ingredients
• 2 1/2 c. granulated sugar
• 1 c. unsalted butter
• 1/2 c. whole milk
• 1/2 tsp. vanilla extract
• 13 large marshmallows, torn in half
• 1 c. Ghiradelli bittersweet chocolate chips {just over 1/2 of a 10 oz. package}
• 1 c. confectioners sugar
• 1/4 c. + 2 T. Kahlua
• 1 tsp. instant coffee granules
• 1/8 to 1/4 c. dark chocolate covered espresso beans, coarsely chopped
Directions
1. Line a 9x9" pan, bottom and sides, with foil. Rub foil with butter or lightly spray with nonstick cooking spray.
2. In a small bowl, whisk together confectioners sugar, Kahlua, and instant coffee granules. Set aside.
3. Place granulated sugar, butter, and milk in a large pot. Bring to a full rolling boil over medium-high heat, stirring constantly.
